Allo Bengan (Potato Brinjal/Eggplant) Recipe
Hi Foodies,
Today, I am gonna share Allo Bengan recipe which is super delicious. Lets start the recipe.
Ingredients:
- 1.5 Tablespoon Vegetable Oil
- 1/2 Teaspoon Cumin Seeds (Zeera)
- 1 pinch of Hing (Asafoetida)
- 1 inch Ginger piece (finely chopped)
- 4 Cloves of Garlic (finely chopped)
- 1 Big Onion (finely chopped)
- 2 Tomatoes (finely chopped)
- 1/2 Teaspoon Coriander Powder (Sokha Dhania)
- 1/2 Teaspoon Garam Masala
- 1/2 Teaspoon Red Chili powder (or according to taste)
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1 Teaspoon Salt (according to taste)
- 2 Big Potatoes (cut into cubes)
- 1 Big Brinjal (cut into cubes)
Method:
Add the vegetable oil in a pan or pot, add cumin seeds and hing. Sauté them for 2-3 seconds. Add ginger and garlic in it, and fry for 30 seconds. Now add chopped onion and fry till soft and golden brown. Now add tomatoes and cook till the tomatoes become soft and cooked well.
Now add coriander powder, garam masala, red chilli powder, turmeric powder and salt and saute for 30 seconds. Now add potatoes and brinjal in it and mix well (If you want some curry type potato brinjal recipe so you can add half cup of water in it at this), cover it and cook for 30 minutes on medium to low flame. Check the potatoes and if they are cooked then sprinkle some fresh coriander on it and serve it hot.
